it's 3:00pm and you're reaching for a sugary snack or a coffee, or you're racing to the gym after work, you haven't eaten anything since lunch and you're wolfing down an over-priced store-bought energy bar. sound familiar? what if you had some easy no-bake energy balls on hand instead? recipe below!
here's what you'll need:
1/4 cup honey (I tend to use a little less!)
1/2 cup nut (or seed) butter
1 cup quick oats
1/2 cup puffed brown rice cereal
1/4 dark chocolate chips
1 tsp vanilla (optional)
2/3 cup unsweetened shredded coconut.
directions: mix all ingredients in a bowl and roll into balls. store in freezer or fridge.
